It’s always a great time of the year for terrific cheese! Just arrived from The Cellars of Jasper Hill Farm where each cheese in the collection is made from a single herd of cows. The fresh wheels go into a special calibrated vault to receive customized care until perfect ripeness. At Eastman we now have Winnimere, a soft, washed-rind cheese made with raw cow milk and wrapped in spruce bark; and Harbison, a spreadable bloomy-rind cheese wrapped in spruce bark.
