Just arriving to the store are some fantastic new cheeses. We have Nettle Meadow’s Briar Summit, the 2017 first place winner in the US Cheese Championships for mixed mild bloomy rind cheeses. This is made with goat, cow and sheep milk, along with cow cream and infused with a raspberry leaf tea, finished with a bloomy rind. The Cowgirl Creamery St. Pat is a spring, seasonal cheese. Made from organic Holstein milk, the creamy wheels are wrapped in nettle leaves, which give the cheese a light smokey artichoke flavor. The Le Chevrot is a fresh cheese made of goat’s milk, it’s creamy and dense, with a herbaceous, nutty flavor. And the Toledo is a semi hard cheese made of a blend of cow, sheep, and goat’s milk. The rind is rubbed in paprika. This a mild cheese that is creamy and sweet.
