We have some new award winning artisan cheeses here for a short time. Marco Polo Reserve, a 2014 American Cheese Society 1st place winner, is a cheese with a dry texture, made with green and black peppercorns giving it an exceptional bite that is well balanced with the cream, smoothing it on to a buttery finish. Also available is Beecher’s Flagship handmade cheese. Flagship is a semi-hard cow’s milk cheese that is uniquely robust and nutty in flavor. It has been aged fifteen months for a versatile cheese that is balanced, dense, and creamy. We also have the Flagship Reserve, a special version of the Flagship, that is traditionally cloth-bound and open-air aged. This aging method creates a slightly lower moisture, higher salt content which concentrates the already rich flavor while producing a long, creamy finish.
