Our featured cheese this month is Zingerman’s Bridgewater Log. This cow’s milk cheese is a super-rich double-cream. It is soft-ripened and has cracked and whole black Tellicherry peppercorns throughout for a full-flavored peppery zing that perfectly complements the slight citrus and gentle mushroom notes of the paste. When young the cheese is best served on unflavored crackers which allow the flavor to come through. As it ages more of the pepper taste becomes more prominent. Great on salads, pasta, and soups, or just by itself.
